Buffalo Cauliflower Bites

Are you craving buffalo wings but want a healthier alternative? Try these tasty buffalo cauliflower bites. They are coated in a delicious breading, baked until crispy on the outside and tender on the inside, and smothered in buffalo sauce. Perfect as an appetizer, snack, or add a side of fresh veggies for a delicious and healthy lunch or dinner!

Buffalo cauliflower is perfect for anyone who loves buffalo wings and is looking for a healthier version that is veggie-packed and comes with all the same spicy and tangy flavors! I am a big sucker for wings, dipped in a bowl of ranch and honestly I think I love these just as much! Aand the best part is they come with way fewer calories and fat than traditional fried wings, so if you're looking for a lower-calorie version this is the perfect recipe for you!
What you will need:
Cauliflower- cut into florets
Buttermilk- I use cultured, full-fat
All-purpose flour-
Corn starch-
Garlic- minced
Spices- chili powder, paprika, salt, and pepper
Panko bread crumbs-
Buffalo sauce- I like Buffalo Wild Wings and Sweet Baby Ray's
Preheat the oven to 425°F
First, you want to make the batter: into a large mixing bowl add the buttermilk, all-purpose flour, cornstarch, garlic, and spices. Mix this up until you have a thick batter consistency.
Now you want to add in the cauliflower florets. Mix it up until evenly coated, then add in the bread crumbs and stir again.

Line a large baking sheet with parchment paper and add the battered florets, ensuring they aren't touching to allow even baking. Transfer to the oven and bake for 20 minutes. Remove from the oven and flip them over. Spray with some cooking spray and pop them back into the oven for an additional 15 minutes until golden and crispy all around.
Transfer to a mixing bowl and add as much or as little of the buffalo sauce that you like, toss to coat and transfer back to the baking sheet and pop into the oven for an additional 10 minutes.

Garnish with some chopped fresh chives and serve with ranch dressing. Add some fresh veggies for a healthy and delicious meal!
