Cheesy Ranch Chicken and Potatoes

Today I'm going to share with you an easy Cheesy Ranch Chicken and Potatoes recipe! This recipe is very budget-friendly and is ready in an hour. If you have some potatoes, chicken and a few other basic ingredients you are all set to make this!

With layers of creamy potatoes, juicy flavorful chicken, a creamy sauce and topped with melty cheddar, this dish is the ultimate potatoey goodness! So, without further ado, let's get right to it!

How to make Cheesy Ranch Chicken and Potatoes:
First, you want to cut, season, and bake your potatoes and onion for 30 minutes. I like to rinse my potatoes after cutting to get rid of some of that starch, but you really don't need to do this, totally a preference thing! I personally love dill, so I always season generously with dill, salt, and pepper. Feel free to add other seasonings you like:)

While the potatoes are baking, cut the chicken into bite-sized pieces, add your seasonings, and sauté in butter for 5 to 7 minutes or until the chicken is done. I like to add a bit of Creole seasoning as I like a bit of spice, but just the Italian seasoning is great too!

Now it's time to make the sauce: add the milk, cream of mushroom, and ranch dressing mix to the pan drippings from chicken. Bring to a simmer, stirring constantly then remove from heat.

When potatoes are fork-tender, put the chicken pieces on top and then cover with the sauce. Last, but not least, the cheese, you definitely need cheese! Top with the shredded cheddar and bake for an additional 15 minutes, until the cheese is melty and bubbly.
