Hot Cocoa Cookies

These delicious Hot Cocoa Cookies are a must make this holiday season! They taste just like your favorite cup of hot cocoa, with slightly toasted marshmallows in the center and topped with melted milk chocolate. The perfect addition to your cookie plate gift giving this Christmas! And of course you WILL need to grab a glass of cold milk to dunk these into!!



These cookies are pretty simple to make but the dough needs some time to chill in the fridge 1 to 2 hours for the best results so be patient- the dough is pretty sticky as is and chilling it will firm it up so you can make those pretty little balls without having your hands coated in cookie dough:) It will also help the cookies to hold their shape more and not flatten out too much while baking.


What You Will Need:

For the cookies,

  • Butter- softened

  • Sugars- granulated and brown

  • Egg- room temperature

  • Vanilla extract-

  • Milk- any milk is fine

  • Baking soda-

  • Salt-

  • Baking cocoa- unsweetened

  • Hot cocoa mix- your favorite

  • Flour- all-purpose


Toppings,

  • Marshmallows- cut in half

  • Milk chocolate chips- or your favorite chocolate, melted


For the cookie dough you want to start off by creaming the softened butter and sugars together. MIx until creamy then add the egg, vanilla, and milk, whisk until light and fluffy.


Add in your dry ingredients and stir until well incorporated, the dough will be a little sticky.


When the dough is well-combined cover the bowl with plastic wrap and place in the fridge to chill for 1 to 2 hours.


Bake Your Cookies:

Preheat the oven to 350°F. Line 2 large baking sheets with parchment paper.


Using a tbsp size cookie scoop, scoop heaping mounds of dough and roll into smooth little balls. Place onto the baking sheets and bake for 10 minutes.



Remove from the oven, add the marshmallow halves on top, and pop them back into the oven for another 2 to 3 minutes until marshmallows are puffy.


Using a spatula, lightly press down on the marshmallows.



Transfer to a wire rack to cool before topping with the melted chocolate. Enjoy with a glass of cold milk.
