One Pot Chicken Fajita Pasta

If you're looking for a healthy and delicious meal that's easy to prep, you need to try this One Pot Chicken Fajita Pasta recipe! Packed with veggies like bell peppers and onion, as well as plenty of fajita seasoning to spice it up, and some creamy pasta, it's sure to be a crowd-pleaser!

Even better, this recipe yields enough for leftovers, which makes meal prep a breeze. My husband and I enjoyed the leftovers for the next couple of days, and it tasted just as good reheated. We like to top it off with a dollop of sour cream for some extra creaminess. This dish is definitely one of our favorites - it's a yummy and feel-good dinner that's perfect for any night of the week!



Ingredients You Will Need:

  • Chicken Breast- cut into bite-sized pieces


  • Avocado oil- for sauteing


  • Fajita seasoning- you can substitute with taco seasoning

  • Onion- sliced into 1-inch pieces


  • Bell Peppers- red, orange, yellow- sliced into 1-inch pieces


  • Garlic- minced


  • Chicken Broth-


  • Heavy cream- Substitute with milk for a lighter version


  • Rotel- or regular diced tomatoes for less spice


  • Penne pasta- or pasta of choice


  • Salt and pepper- to taste


  • Garnish optional- sour cream, green onions, fresh chives, cilantro, lime wedges, parsley

Start by adding 2 tbsp avocado oil to a large deep skillet, or Dutch oven over medium-high heat. Add the chicken pieces and 1/2 of the fajita seasoning. Cook for about 5 minutes, flipping chicken so it cooks on all sides. Once done, transfer to a plate and set aside.

Add 2 tbsp oil to the pan, add garlic, and cook until fragrant, about a minute. Add onion, bell peppers, and remaining fajita seasoning. Cook for another 5 minutes, stirring occasionally. Transfer veggies to the plate with chicken and set aside.

To the skillet, add diced tomatoes, heavy cream, chicken broth, and pasta, season with salt and pepper. Simmer on low heat for 12 to 15 minutes or until most of the liquid is absorbed.

Add the chicken and veggies back into the pan with the pasta and stir to combine. Heat through and you are ready to serve! Serve with a dollop of sour cream and garnish with cilantro, chives, green onions, parsley, or whatever you like.
