This Sweet Potato Taco Bowl offers a simple yet scrumptious dinner option that's both nutritious and full of flavor. It features taco-seasoned ground beef, spicy roasted sweet potatoes, and roasted corn, all served over a bed of rice with an easy three-ingredient maple chipotle sauce. While these bowls are delightful on their own, feel free to garnish them with any preferred taco toppings, such as sliced avocado, halved cherry tomatoes, shredded cheddar cheese, and more.

This recipe is excellent for meal prepping as well! Simply portion it into your meal-prep containers with some rice for convenient and effortless meals all week long.
What You Will Need:
ground beef- use ground turkey or chicken for a lower calorie option
sweet potatoes- cut into bite-sized pieces
frozen corn- fresh, frozen, or canned
sour cream- Greek yogurt is great too
maple syrup- to sweeten the sauce
avocado oil- any neutral oil is fine
seasonings- taco seasoning mix, salt, black pepper, chili powder, cumin, garlic powder, chipotle powder
For the sweet potatoes:
Begin by preheating your oven to 375°F and lining a baking sheet with parchment paper.
Dice the sweet potatoes into bite-sized chunks and toss with 1 tablespoon of avocado oil. Season with salt, pepper, chili powder, cumin, and garlic powder. Spread on the prepared sheet and bake for 30 minutes, flipping once halfway through.
For the ground beef:
Heat a skillet over medium heat, cook the ground beef until browned, then drain the excess fat. Stir in the taco seasoning and water, reduce the heat to medium-low, and simmer for another 4 to 5 minutes.
For the roasted corn:
Heat 1 tablespoon of avocado oil in a skillet over high heat, add the frozen corn, and roast until it begins to brown, which should take about 3 to 5 minutes.
For the sauce:
Combine the sour cream, maple syrup, and chipotle powder in a small bowl. Adjust the chipotle powder to taste for a spicier sauce.
To assemble the bowls:
Add cooked rice into your bowl, then layer on the roasted sweet potatoes, corn, and seasoned ground beef. Finish with a drizzle of the sauce and serve immediately.
