Turkey Caprese Sandwiches

Here's a quick and nutritious meal idea that's ready in just 30 minutes! These wonderful Turkey Caprese Sandwiches are simple to prepare and baked in the oven until perfectly toasted and incredibly delicious!

I used to love the regular grilled caprese sandwich at the restaurant where I worked. I would have it for lunch at least twice a week. Adding turkey and spinach to this already delicious sandwich gave it extra protein and nutrients, and made it even more delicious!
What you will need:
Ciabatta rolls-
Sliced turkey-
Fresh Mozzarella-
Shredded mozzarella-
Pesto-
Sliced tomato-
Spinach-

First, preheat the oven to 400°F. Grab those rolls, separate them and slather 1 tbsp. of pesto onto each half. Throw the bottom halves into a baking dish. Add the shredded mozzarella, sliced turkey, a bunch of spinach, a slice of tomato, and 1 oz of fresh mozzarella for each sandwich. If you're all about fresh mozzarella, skip the shredded stuff and double up on the fresh mozzarella. Add the roll tops and cover the dish with aluminum foil. Pop it in the oven and bake for 20 to 25 minutes until the rolls are a bit toasty and the cheese is nice and gooey.

These sandwiches are pretty filling on their own but they also go great with some tomato soup!
