Delicious Turkey Meatballs with Creamy Mushroom Sauce

How to make Delicious Turkey Meatballs with Creamy Mushroom Sauce


First, you want to gather and prep your ingredients. For this recipe you will need 1 pound of ground turkey, 1/2 package crushed saltine crackers, 1 egg, 1/4 cup finely diced onion, 2 to 3 cloves of minced garlic, 1/2 tsp salt, 1/2 tsp dried thyme, 1/2 tsp dried parsley, 1/2 tsp freshly cracked black pepper, and 2 tbsp butter for frying. Tip: be sure to chop your onion finely. The meatballs won't hold together very well if you have large pieces of onion.

Mix all the ingredients together in a mixing bowl by hand; be careful not to over-mix! Over-mixing can cause meatballs to be dryer in texture so mix just until combined. Then using a 1/4 measuring cup, scoop the mixture into balls. This makes a pretty good-sized meatball, so if you want smaller meatballs just use a smaller scoop.

Okay, now it's time to fry those meatballs! In a large pan on medium heat add 2 tbsp of butter. Fry meatballs, turning them over frequently to try and get all sides nice and brown. They don't have to be completely cooked through at this point as we will be cooking them again in the sauce. When they have finished browning remove them from pan.

For the sauce you will need: 1 tbsp butter, 1/4 cup diced onion, 1 cup finely diced mushrooms, 1/3 cup all-purpose flour, 3 cups water or chicken stock, 2 cloves minced garlic, 1 tbsp chicken bouillon, 1/4 tsp salt, 1/4 tsp dried thyme, 1/4 tsp dried parsley, 1/4 tsp freshly cracked black pepper.

To the same pan, add 1 tbsp butter, or more if needed. Add onion and garlic, sauté for a few minutes then add the mushrooms and cook for one minute. Now, add in the flour, stirring to combine. Cook for a minute or two, stirring constantly, then add water or broth and seasonings. Cook this for another few minutes, stirring constantly then add your meatballs into the sauce and cook on low for 15 minutes, until sauce has thickened up.
