First, I'd like to share a little secret on how to make the best cupcakes using a cake mix! Yes, you can make delicious, bakery-style cupcakes at home using a classic cake mix and a few simple ingredient swaps. It's very simple: Mix and bake the cake mix according to the package directions, but skip the water and add the same amount of milk instead. Instead of using oil, use the same amount of softened butter. Do not melt the butter! Using softened butter instead of melted will result in a fluffier batter, which will yield nicer-looking uniform cupcakes! Beat for a few minutes until batter is light and fluffy; it will almost look like frosting:) also, be careful not to over-bake them!

For the Marshmallow Buttercream
Ingredients you will need:
softened butter-
Marshmallow Creme-
Powdered sugar-
Mint extract-
Green food coloring-

In the bowl of a stand mixer, add the softened butter, Marshmallow Creme, half of the powdered sugar, and mint extract. Using the whisk attachment, mix until combined then add in the rest of the powdered sugar and a few drops of green food coloring. You can also add some more powdered sugar here if you want it to be a little stiffer. Beat on high for about 5 minutes, scraping the sides of the bowl a few times to incorporate everything.

Fill a piping bag with buttercream and pipe onto the cooled cupcakes.

Garnish with Andez Mints and some mini chocolate chips if desired. These will keep on the counter for a few days, if they last that long:)
