Blueberry Lemon Muffins

These Blueberry Lemon Muffins are simply the best! Lots of bright lemon flavors and bursting with juicy blueberries! These are quick and easy to make and basically fail-proof. Make these for a quick breakfast or snack, if you have kiddos they will love these!

Blueberry muffins are one of the easiest things to bake, all you need is a muffin tin, some cupcake liners, and a few basic ingredients and of course, some juicy blueberries!


What you will need:

for the muffins,

  • all-purpose flour-

  • granulated sugar- or cane sugar for a healthier option

  • baking powder- what makes these muffins rise so perfectly

  • salt-

  • egg-

  • milk- milk of choice, dairy, non-dairy, both work just fine

  • oil- any neutral oil

  • vanilla extract-

  • blueberries- fresh or frozen

  • juice and zest of one lemon-

  • powdered sugar-

  • lemon juice-

  • lemon zest for garnish- optional


Preheat the oven to 375° F. For the muffins, start by combining the wet ingredients with the sugar, whisk until light and creamy. Next, add in the baking powder, salt, and flour, mix it up well so no lumps remain. Using a spatula fold in the blueberries and lemon zest, be careful not to overmix. As you can see the batter will be very wet and this is perfect! The baking powder combined with a higher temperature causes these to rise quickly so these can be pretty full without the risk of the wet batter running over.

In a 12-cup muffin tin add paper liners and fill the cups a little more than 3/4 full. Bake for 15 to 20 minutes or until a toothpick inserted into the center comes out clean, 18 minutes was perfect for these!

Transfer the muffins to a wire rack with a piece of wax paper underneath and let them cool for about 15 minutes. Meanwhile, you can make the glaze which consists only of 1 cup powdered sugar and 1 to 2 tablespoons freshly-squeezed lemon juice. Start by adding the powdered sugar to a small bowl and add 1 tbsp of lemon juice, stir and add more lemon juice as needed until you have a nice, thick glaze consistency.

Drizzle the glaze over the muffins and sprinkle with some lemon zest if desired. Be sure to enjoy one with a cup of coffee or tea while they are still warm! These will keep for a few days on the counter.
