This easy-to-make Low-Carb Cabbage Skillet is healthy and full of flavor. You'll want to add it to your rotation! It's the perfect light dinner to enjoy on busy weeknights.

I also love to make this as a meal prep, just divide it into your containers and you have healthy lunches or dinner prepped for a few days.
What I Love About This Recipe:
Simple- easy to prepare, requires only minimal ingredients, and is ready in 30 minutes.
Nutritious- packed with cabbage, peppers, onion, and lean beef for protein—I'm constantly searching for healthier recipes that are still satisfying!
Flavorful- this recipe uses lots of herbs and spices to add flavor and depth to this dish.
What You Will Need:
Ground beef- I like to use lean ground beef or venison
Green cabbage- chopped
Onion- diced, I used white onion but yellow works perfectly too
Red bell pepper- diced
Fire-roasted diced tomatoes- undrained
Shredded cheddar- shredded colby or colby jack are great too
Garlic- minced
Avacado oil- or any neutral oil
Seasonings- smoked paprika, oregano, rosemary, garlic powder, onion powder, Italian seasoning, salt, black pepper
How To Make It:
Start by adding the oil to the skillet, add the ground beef and all of the seasonings. Cook until no longer pink.
Next, add in the peppers and onion, cook for another 5 minutes or until beef is slightly browned.
Add in the minced garlic and tomatoes, and stir.
Pack the cabbage on top, cover, and cook for 15 minutes or until cabbage has wilted, stirring a few times as it cooks.
Lastly, top with the shredded cheese, cover, and let it sit for about 5 minutes until the cheese is melted and serve:)
