These soft and fluffy pita flatbreads are perfect for homemade Gyros, flatbread pizzas, or stuffed with your favorite sandwich toppings. They are very versatile and pliable so they won't just break apart when folded.

These pita-style flatbreads are soft, fluffy, and perfectly pliable, so you can fill them with any toppings you want without the risk of them tearing or breaking apart. Try these delicious Meatball Gyros for an easier twist to the traditional gyro, or make some Buffalo Chicken Flatbreads for an easy 30-minute meal! I love to brush some garlic butter on these and dip into roasted red pepper hummus while they're still nice and warm;)
What you will need:
instant dry yeast-
granulated sugar-
neutral oil-
bread flour-
salt-
How to make Pita-style Flatbreads:
In the bowl of a stand mixer combine warm water, yeast, and the sugar. Stir to combine and let it rest for 5 to 7 minutes until foamy.

Add in the oil, salt, and flour. Once combined, knead for 10 minutes, the dough will be slightly tacky but should pull away from sides.

Form the dough into a ball and transfer to a well-oiled bowl. Cover with a clean towel and let it proof in a warm place for 45 minutes to and hour until doubled in size.

When the dough has doubled, divide into 12 equal pieces and roll into little balls. Let your dough balls rest a few minutes while you get ready to cook them.

Place your cast iron over medium heat and brush with a little bit of oil. Take a ball of dough and gently stretch into a rough circle about 7 to 8 inches in diameter. Place onto the hot cast iron and cook for 60 to 90 seconds until bubbles form. Flip over and cook for another minute. Transfer to a plate and cover with a towel. Repeat this process until all the flatbreads are cooked. Keep warm until ready to serve.
